What day does your week start on? Sunday? Monday?
You can use strtotime("Third Sunday of July 2007") and strtotime("Third Sunday
of July 2007 +7 days"). Maybe that should be 6 days. Play with it and
hopefully you'll get something you can use. The function returns the number of
days since the epoch which can be used as the second argument in the date()
function.
I'm sure there are many approaches which could be used.
