Narendra: I think it might not be a good idea to use 'base64_encode' because
users with knowledge of php could easily decode the strings and get the actual
emails.
James: mcrypt_encrypt looks like the solution. I will look more into that.

You can simply use base64_encode() function to encode email and
base64_decode() function to decrypt the email address.
