I had to manually install fastjar before I could build debian packages
with javahelper; I believe this dependency should be declared.

Hello,
I am currently triaging bug reports for Javatools. Thanks for your
report. However everything is in order and a dependency on fastjar is
not required since all packages must be built with default-jdk which
provides the jar binary.
https://www.debian.org/doc/packaging-manuals/java-policy/x84.html
openjdk7:
/usr/lib/jvm/java-7-openjdk-amd64/bin/jar
I have never experienced any problems in a clean cowbuilder environment,
so I presume that all necessary dependencies are declared by javahelper.
Regards,
Markus
