I’d like to patch the code of systemd version 241 et generate a deb package from the patched sources , cross-compiled for armhf system.

That's an ancient version. That said, I personally would probably pull the source package from snapshots.debian.org ¹ and apply your patch to this version and then use the typical debian tools to build the package.
