each time I right-click in Thunar somewhere besides the icons and focus on
"Create document" menu item, the whole desktop freezes. It doesn't show any
options inside the "Create document" menu item, just a thin line on the top of
the options appear. First time I noticed this issue when I tried to create a
file inside a mounted FAT partition on my system harddrive. Now it freezes each
time I try to create a document in Thunar.

Ok, I can confirm this on Thunar 1.4, and, good news, it seems fixed in
Thunar 1.6.
I don't think it's really useful to put .pdf files there, but I can
imagine using jpg files.
Looking at the Thunar code, it seems that not much commits touched the
templates code. I'm unsure if it's possible to backport the code to
Wheezy, but until them, as a workaround, you can remove the relevant
files from the template dir.
