Specifically, go to Site Setup (control panel) and then to the 'Types'
configuration area. Select a content type (such as 'Page') and then
specify whether or not for that type Versioning should be enabled
(automatically or manually) from the Versioning policy drop-down. Click
Apply Changes and you're all set. Repeat for each type you want to
version.
Warning: We don't typically enable versioning on Files and Images,
suspecting that may cause database bloat, but I would assume it does
'just work', but just might not be advised (to keep many many versions
of large file attachments, that is.) Using versioning on the Page,
Event, News Item and your custom page-like types works just great, though.

As Mikko suggests, cmfeditions has been part of plone core for some
time. Just activate it in the add/remove products control panel item.
For future reference, you just need to add the package to the list of
eggs in the buildout.cfg file and re-run buildout to add additional

best way to do that is to use CMFEditions.
I have downloaded the latest version of CMFEditions (2.2.4), but when I
unzip it I find that there is no *.egg file. I had assumed that I would use
an egg file and buildout, but now do not know what to do. Anyone have
install experience with CMFEditions under Plone 4?
If I recall correctly CMFEditions have been bundled with Plone since 3.3.x
and comes with the default setup. Just install "Editions" or "Versioning" in
add/remove add-ons.
