Hi,

there is an initiative trying to port many unix programs to Mac OS X, 
which is not that hard, since Mac OS X is based on BSD, but often the 
dependencies are missing. This initiative is called macports (based on 
darwinports)

and as far as I know, is it supported by apple. It's an alternative to 
fink, which I found out never worked reliable. Anyway, I was looking for 
  plplot just for fun and was surprised that plplot is already included 
in with the 5.8.0 version:

I think we should also advertise that on our webpage and wiki, since the 
  install of plplot becomes than rather trivial

sudo port install plplot

All missing dependencies will be downloaded (and compiled, like gentoo) 
and than plplot will be downloaded and compiled.
