Sure you can. Right-click on the channel name, select Configure
Selected Channel, then at the top, there is a "Channel name:" box, just
change the name there.

I don't use Plucker Desktop, but I just plucked this with
plucker-build on Linux, and it worked flawlessly. It successfully fetched 79
links, and the resulting .pdb was 132k in size. What other parameters were
you using? What operating system are you using?
