I give another vote for TiddlyWiki as a easy and powerful wiki. So cool that it is contained in a single file, data and logic. Easy to move around and just use on a local computer. Multiple people can use an instance of it by just putting it on a place all of them can access.
Also look at the Google Sites feature for Google Apps for Your Domain, if you have that. It is a simple wiki that you don't have to host because Google is hosting it. http://www.wikispaces.com/ is also pretty good and has free options.
