Oops, forgot one detail... To make sure you have a date that will
change, double click the date that you just inserted and make sure you
have just date selected and not date (fixed).

Easily done... just do Insert -> Fields -> Date
The date will show up in gray to let you know that it is a variable
that can change. If you want to adjust the format of the date, just
double click on it.
