Ok, I usually don’t ‘Me too’, but today I’ll make an exception because I want to give some reasons.
So, I too recommend Mint. I have used Red Hat, CentOS, Ubuntu, others that I forget, and in days gone by I’ve used slackware and others. These days, I am more interested in USING Linux than in learning all the nifty administration things you can do (and sometimes will be forced to do to get done what you want to do). I’ve “been there, done that” and would rather just get doing the stuff I am installing Linux to do than spending a lot of time learning how distro <x> does <y>. Yes, if you’ve never used Linux perhaps you’ll have to learn how to do <y>, but generally just fire up Synaptic, select the package(s) you want, install, and get back to work. Assuming of course that what you wanted isn’t there already. I actually use Mint for my servers also. We used to have a Red Hat server but it was a VERY old version, and what I needed to run on it was easier to install from Mint, so I went with Mint. Yes, I’m arguably a bit lazy… Now if somebody would make it so I can use more than 2 monitors on a computer with 3 or more video outputs I’d be VERY pleased ;-) Notes: I generally use the Mate (or was that the Cinnamon?) version of Mint. It is the one that gives you the most ‘old-fashioned’ menu system. I also almost always use 2 monitors and 2 or 3 or 4 panels (2 on each monitor, top and bottom, generally).
