I use plesk and cpanel for our datacenter. It works great. I prefer exim on 
cpanel but both panels have strengths and weaknesses.

I recently was introduced to Plesk.  I like it and wish I would have started 
using it years ago.  It is not free, however once installed will make your life 
easier than working on the raw metal.  Yes I agree there is a lot to learn and 
running on the bare metal can be painful and take a lot of time..... And one 
can learn a lot if that is your goal.

I'm evaluating ISPConfig which you might be able to use as a mail server 
management tool.  

Whichever way you choose will take a lot of time and effort.
