Remember that there's an EXT IFS for Windows. This means that you can
read an ext4 partition from Windows, while you can't read LVM from
anything but Linux. If you need to keep Windows around (many people
do), you'll get maximum flexibility and minimum hassle with 4
partitions: EFI, Windows, swap, and / . You might even be able to get
away without swap if you don't want to do suspend-to-disk.
