VOIP will not shield your privacy from interception from NSA! End to end encryption is about the best one can currently do, other than ceasing all actions that need to be private in any place but in person. Anything with a PSTN trunk is switched to their centers (thanks Cisco). Anything that traverses the internet is part of current monitoring - data sampling. If they want to intercept your soft phone or VOIP calls that's all build into the monitoring model.
