AFAIK:
User 'nobody' refers to someone who is not actually user of system but accesses
some services of system. For ex. someone who accesses website hosted by your
machine. In your case nobody is accessing portmap service. I don't know function
of portmap.

User 'lp' corresponds to those who use printers. In your case 'lp' is accessing
cupsd (Printer Deamon)

User 'postfix' corresponds to ones who use mail. Postfix is mail transfer agent
which is an alternative to sendmail.

Please correct me if wrong.
