IMAP and an oldie but goodie, UUCP. (slurp)
Most people only know about POP2/POP3. But there are other ways to skin
the cat. 

Then, of course, there's the time old method of allowing users to TELNET
right into the box. You could set their default shells to pine or mutt, or
what have you. They might not have the GUI interface that so many are used
to, but they do the job.
