Interesting project, I think it would benefit from some documentation. As to a training manual, I don't think there can be a single one because of the wide diversity of FOSS both at the OS and at the applications level. Best place to start would be the home pages of the individual components -- of the specific distro, OpenOffice.org (I presume that's the choice office suite?), The GIMP, and the other software applications. Other LUGs' sites may also help.
