I think one good source of material is the Quick Start Guide of the distro (for example: Mandriva (http://www.mandrivalinux.com/en/fdoc.php3), Fedora (http://fedoraproject.org/wiki/FedoraDocs/ReleaseNotes/Core4Test1), the KDE User's Guide (http://docs.kde.org/en/HEAD/kdebase/userguide/), OpenOffice.org (http://www.learnopenoffice.org/), the resources are as much as the number of distros and packages available. Its really a matter of preference.
