Most applications should work with the Heartbeat + DRBD combination for
a failover setup with redundant data (think RAID 1 over the network).
Although I haven't implemented a highly available email server setup, I
have worked on highly available PostgreSQL and NFS servers.

The only downside to using Heartbeat + DRBD is that one node will be
completely idle, while the other one will be handling all of the load.
Application-level mirroring/clustering allows you to load balance and
leverage your hardware better. You may want to explore the clustering
capabilities of IMAP/POP3 servers like Courier and Cyrus.
