Linux on server side. And I agree with the suggestion to devote several clients to Linux. The rest of the machines should then be Windows, if only for the YM-webcam consideration, at the very least.
And please, go for OpenOffice and Firefox. They're the best thing you can contribute to FOSS advocacy at this point in time. Although, you'd need more time "care-giving" to your customers, particularly with OpenOffice, as what Paolo warned about. Hope this helps.
