It depends on your needs. If it's a workstation, Mhac's scheme would
be okay. If it's for a server, I don't know, I'm a bit OC when it
comes to this so I allot a few other partitions like:

/var
/opt or /tmp

aside from what Mhac said. While you're at it, why not try to take a
look at LVM[1]? It's a pretty interesting aspect of volume management.
