RAID 0+1 if you can get it. At least that way you get all the benefits of data safety from RAID 1 and all of the benefits of speed from RAID 0. The HP/Compaq SmartArray RAID controllers are designed specifically for the Proliants; they have full support for hot swapping (so if one disc dies you can take out the dead one and swap a new one in, all without ever shutting down your machine), and the hot swap is designed to use the Proliant's drive bays. They work very well with GNU/Linux.
