In your DNS. You need to assign MX records with the appropriate
priorities. Remember that you should avoid MX records pointing to an IP
address or to a CNAME record. Some mail servers will probably not
deliver mail to IP addresses, and CNAME records might not have an IP
to name address mapping to resolve to.
