maybe the most popular way of doing this is via:

1.postfix ( or qmail or sendmail ) + amavisd-new + spamassassin
or
2. sendmail + mailscanner + spamassassin

Antivirus to use are clamav, trend, hbedv, nod32, etc. (take your pick,
google is your friend)
