Froilan, If you say easier to administer and configure try SCALIX it is and alternative for Microsoup Exchange. If you want really-really easy just out of the box try installing Xandros with OEM Scalix you will have the complete package out of the box.
Well if you need something like light and easy Postfix+Dovecote is your partner you can do as well a relay server on it if you have strict local area network policy.
