I would also consider mint, as it is ubuntu without the hassle of hunting down 
proprietary codecs, etc.  I have used their live cd and it works well.  It is 
yet another flavor but well done and set up a bit more like a windows machine 
would be.

I would hand her an Ubuntu disk because (a) I use Ubuntu, and I can vouch
for it being a very good distro for the recovering Windows user, (b) it
has a friendly little "install me now" button right there on the desktop,
and (c) I've used the live CD and it always works.

The _only_ other Live CD distros I've used are Knoppix (which I like, but
is really made to _only_ be a live CD distro) and DSL (which is cute, and
worked well for me when I needed a distro I could put on a 256k USB stick,
but is _small_).  So I can't call myself an expert on live CD
distributions.
