No, you will not be "stuck" with whatever you install, it is just a lot
faster for me to install packages once for each install instead of
twice.  I also comment out any references to CD's
in /etc/apt/sources.list, sticking to just online sources for packages.

No, you can use the full version to install the system that you want,
then use the online updates which will probably update most packages.
CD package versions always lag online version, it is the nature of the
beast.
