When I write for publishers, it's historically been a struggle to even make them accept OpenOffice.org documents. Since OOo 2.x, .doc files written from OOo Writer have been (almost) seamless with most publisher templates. But there have been a few hiccups with some specialty styles required by some publishers. With the advent of OOo 3.x, previous visual issues with embedded notes have been solved. Haven't tried it yet, but I'm hopeful ODF will work with publisher templates written in Word. I've never written for SV, so O'Reilly is the only publisher I know of who accepts LaTeX. I'd guess O'Reilly allied publishers (e.g. No Starch) may also accept LaTeX.
