I've never used the GUI tools to which you refer, but the SSH-based connection you're getting probably doesn't have anything resembling real filesystem semantics. It's more like FTP: you can pipe any single file over the connection, edit it, and ship it back. Beyond that, however, it doesn't have the moxie to allow an application to create and manipulate multiple filehandles on the remote mount point. I don't use OpenOffice.org, so I don't really know all that much about its requirements, but if it wants a real filesystem, use NFS or CIFS.
