Use 64-bit if:
* You might have 4+ GB RAM at some point
* You are doing heavy number-crunching (check the benchmarks)

Use 32-bit if:
* You want to use an older distro, and have Flash or other plugins work.
* You have proprietary software that is 32-bit-only
  (you can usually run 32-bit binaries on 64-bit with lib32, but it's hinky)

I'm in the process of eliminating all 32-bit servers in my racks.
