Maybe sox[1] ? Works well but it's console-based with a lot of options; takes a bit to master. IIRC, Ubuntu comes with a simple simple sound recorder. You could use that for the individual tracks, then glue them together with sox or some other CD mastering app that supports track gap adjustment.
