If you read my original post, you will see I have the problem AFTER
running update-grub.
Update-grub re-generates /boot/grub/grub.cfg after supposedly scanning
for kernels.
Part of that regen process is controlled out of /etc/default/grub.
I cannot find any references there to "Previous Linux Versions" sub-menu.
