The two most popular, and probably most capable, are Kino and Avidemux, both of which will be in the repos for most fully configured distros. I've used them both, Kino more than Avidemux, but I am far from an expert. Mostly I use them to convert an 8 GB blueray movie to something that I can cram on an ordinary DVD.
