I have set up a number of "non-computer" people on Mint. Initial stock install, set up Thunderbird for email, Firefox for a browser, and LibreOffice for word processing. Appropriate icons on task bar. That's all they use, nothing else needed. Don't have to worry about package managers, updates, or much of anything else. With LTS releases, typically good for the life of the computer. Some of them have no idea they are not using Windows. One user did call me a while back and asked what version of Windows she was using, because someone asked her. They were curious when she told them her computer has never crashed. I told her Windows-L. She said "Cool" and went on. All are very happy campers.
