I believe that you answered the question of data storage size yourself. mp3 files do not compress well. Resulting in .zip files typically bigger than their content.
So, if you need to cary around 20 1.2GB bible stories - 32GB mp3 player device should work just fine. As for the usability, I would try to select a device which presents itself as USB mas-storage when connected through USB - so that you can easily manage the fules on the device.
