Two ways. First you modify your default init runlevel. You're probably
using runlevel 5, the default for a graphical login. Switch to runlevel 2
or 3. Do this by modifying the initdefault field in /etc/inittab.

Alternatively you can disable automatic loading of gdm (or xdm or kdm,
something like that) by modifying the symlink in /etc/rcX.d/ or
/etc/init.d/rcX.d/ where (X = your runlevel). You can also use chkconfig
to do this. :)
