You can always as easily point their MX to their new ISP ...
but my two cents' worth is since email is one of, if not _the_, most
important application, i usually provide a backup or transition period
wherein in one week (or so), I will have the MX pointed to the new ISP,
and keep a backup.ispdomainhere.com. This way, they can still access
their old mail by using the said address. If everything goes out fine,
you, or their new ISP, can always bulk-transfer all their emails to the
new server using fetchmail or other programs.
But this is more of a style more than anything else. And good customer
relation, IMHO.
So yes, after a long-winded explanation, the short of it, you can point
their MX to the new ISP :)
