first install qmail or postfix (sendmail is not that
newbie friendly)

www.postfix.org
install it and read about selective relaying ( this
differs from MTA to MTA )
and for those who are abroad there are a couple of
things you can do..
1. install a webmail so they could get their email
http://www.squirrelmail.org is a very easy to install
lightweight fast modular webmail (php/imap)
2. you could do pop/smtp (pop over smtp) or smtp
authentication ( read the documents for your mta how
to do this)
