hrmm the best Mailservers i think are those that yahoo
uses or those that can handle millions of users :)
hehe kidding aside

if you are asking about MTA's well the answer is
depende :)

every mta has it's pros's and con's
i suggest you go read and visit this url's

www.sendmail.org
www.qmail.org
www.exim.org

these are the 4 most common used mta's in a *nix/linux
envirorment
opinions will differ for every person but ill try to
give you some information about this four


postfix is a drop in  replacement for sendmail 
it is fast easy to configure and not as monolithic as
sendmail and it keeps almost 100% compatibility with
sendmail it is very actively devoloped it is stable
and secure ( only one exploit that i know of and that
was like years ago ) yet it is still young so expect
more improvements from it

sendmail - the mother of all mothers the oldest of the
4 mta's (defacto standard? :) ) some people would
swear by it, a very powerful mta but has it share with
security issues cause of its monolithic nature (
recently another exploit was found local root exploit)
very hard to configure (cause i dont use it thats why)
:) and yet it's features are unmatched if you know how
to use it stick with it specially with the new
8.12(not sure about the version) running as non suid
root and yeah i heard it would not be monolithic ... 

qmail ( im a qmail user but ill try not to be bias)
qmail is an advanced smtp server .. a replacement for
sendmail.. it's not monolithic and has been tested to
work gracefully on high loads ( yahoo, hotmail to name
a few who use it ) 
one of its best traits is its design, security and
straigh forward configuration.( some people say qmail
is hard to configure :) i say they are just to lazy to
read )
it has a very strict licensing (DJB style licensing)
but yes still free.
it is not actively developed by djb anymore ( he's to
busy suing the US govt. :) ) hehe been years ( the
last version released was version 1.03 - 1998) but
there are other people who release patches for it
one thing i can say .. qmail + ldap (www.nrg4u.com
rocks)

IT'S NOT JUST SECURE.. IT'S "DJBSECURE" 
no known exploit or whatsoever (all hear say :))
(fast secure and reliable what else can you ask for)

exim -  is sendmail and qmail in one (i read about
this a long time ago ) good for small and not so big
mailservers, easy to configure (debian distro has it
as default mta) but has a couple of bugs recently 

well, read more and choose the one you like and fits
your taste ..
