It won't infect your server. See below for a thorough explanation.

Intelligence and knowledge. :) That's the best protection. Don't go
around doing unwise things as the root user.

Someone who hasn't read Rick Moen's FAQ. Go read it at
http://www.linuxmafia.com/~rick/faq/

Email attachments cannot infect a Linux box because 1. most of them
depend on Microsoft Outlook, 2. even if one was specifically
designed to target Linux, MUA's available for Linux are not possessed of
the unique brain damage in Outlook, and 3. even if a single user got a
hypothetical email virus that somehow subverted the particular mail
client he or she was using, it would only affect him or her, because of
the Unix security model (while it's not as good as it could be, it's a
fair sight better than anything we have in most Microsoft OSes).

Anti-virus software is however deployed if your Linux box is acting as a
mail server for a lot of clients that run lesser operating systems and
run such brain damaged mail user agent software that does many foolish
things for you. Your Linux box however, will not be affected by passage
of such infected mail. It's just mail to your box. Some people run
such scanners and attachment defangers and virus scanners at their mail
servers here; I believe you already have some useful responses if this
is your concern.
