To set up peer-to-peer or client-server file sharing between GNU/Linux and Microsoft Windows workstations, an excellent program called Samba[2] exists. There are a lot of very useful documentation in their site, as well as in our archives[3] which are searchable. One will be to use a cacheing proxy like Squid[4], and the other will be to use Network Address Translation (NAT) using IP masquerading. This is achieved by using the ipchains or iptables utilities that interface with the NAT capabilities of the Linux kernel. You should find good documentation on both topics in the Linux Documentation Project site[5], of which a number of local mirrors[6] exist, as well. And of course, the archives.
