yep! this is possible. you could have 2 /(root partition), 2 /usr partition, 
same /var and others (/home, /tmp).  note though that redhat 6.2 (i'm assumming 
that redhat is your chosen distro) does not support the ext3 partition yet, so 
you have to mount the common partitions as ext2.

ps: why install 2 linux versions of the same distro on one box? i would want to 
install 2 linux distros on one box only for comparison. i would happily get rid 
of the other distro if i have chosen which one i want..
