Postfix will only replace qmail (and probably vmailgrd), and can deliver
mail to Maildirs (natively, or using an MDA like Maildrop, which I
prefer). Postfix operates with Courier IMAP very well. You shouldn't
need to migrate your mail data at all, just MTA settings, so you don't
need to worry about losing mail.
