As I mentioned before, I decided to go with just ext4 and mdadm. I used
mdadm once several years ago and, although I had forgotten all about
it, once I read the man page things started coming back. It seemed
easier than a new learning curve for btrfs/zfs. They might be better,
and I will likely end up with one of them eventually, but not right now.

And I'm happy to say that the job is done! It took from 10am today
until 7:30 to transfer 9TB of data from the Mediasonic RAID0 with WD
drives to the new Intel U.2 drives, also in RAID0. The new setup is
31TB, currently 28% used, so I have plenty of space for the future. And
man, is it FAST. I clicked on the folder where it is mounted and bam!
Everything was right there. No waiting for a couple of minutes
listening to spinning drives grinding along and USB 3.0 delivering the
data to me.

My next adventure will be replacing the Synology NAS, or at least the
WD drives in it. But there is no rush.

Thanks to all for the suggestions. It has been a big learning curve!
