I've been running gentoo + nvidia for a few years now w/o any problems.
I would recommend:

- use the newest driver (still marked 'unstable' in portage) :

cat >> /etc/portage/package.keywords <<EOD
media-video/nvidia-kernel   ~x86
media-video/nvidia-glx      ~x86
media-video/nvidia-settings ~x86
EOD

- compile the kernel you want to use, then boot to it
- make sure that /usr/src/linux links to the kernel sources of the
  running kernel
- emerge the above three all again

You'll need to emerge nvidia-kernel again each time you upgrade your kernel.
