One possibility might be FreeNAS (http://www.freenas.org/).  It's
based on FreeBSD rather than Linux, but that may be a point in its
favor :)  Apart from that, it supports running from CD (with config
information on a floppy), or running from a bootable USB drive, or
installing to the hard drive.
