It's not quite that easy. You have to send through a different SMTP server, AND not save the sent message to your Sent folder. If you do that, then Gmail shouldn't have a copy already.

Correct. But it does work if you do that. (Not that that justifies Google's whacked-up implementation of IMAP.)
