Mainly because gvim sources .vimrc and I like to have one file that

But that's the whole point. You use .vimrc for almost everything, except
you put gvim-specific things in .gvimrc. I usually have only one or two
lines in .gvimrc - font, maybe a different colorscheme, etc.
gvim (and macvim) do indeed source .vimrc first, then .gvimrc after.
