IT is how I prefer it and use it.

With IT being the most common usage I've seen, in fact I never seen I. T.
used,
I would say I. T. would be very unprofessional.

My first impression if I saw I. T. on a business card would be, "Ah, a n00b
trying
to get into the business.  What a tool."

And first impressions are what business cards are all about.
