Or rather, the IFS setting was interfering with bash showing you the
contents of IFS.

        [cedwa...@pheasant ~]$ echo foo${IFS}bar
        foo bar
        [cedwa...@pheasant ~]$ echo "foo${IFS}bar"
        foo,bar
